How do you prevent your email address from being used to spam other people?

You just can't. The emails work like this: you write a message in your email client and you send it to your email services provider to deliver it to the destinator (who you have specified in the email). Your email services provider (who is actually a machine - email server) receive the email you have sent him, and he post it then to the address you specified.

Now imagine a bad guy sitting on that server, rewriting your destinator's address - in this case your email will be sent to somebody else.

Now imagine a bad guy, again sitting on the same server, but now rewriting YOUR (senders) address - and here it is. In fact he doesn't need your email - he can just make one (with your email address in the Sender field, same as he can edit the coming emails.

So if someone has a server like this, he can just do this forever ;)

How do you prevent your email address from being used to spam other people?
You need to not download any viruses or spyware. If you get an attachment by email, do not download it, unless you know the sender, and even then look at it and make sure it is something that they were suppose to send you.
